Vinification
Grapes are hand-harvested in early September and gently pressed with short skin maceration to obtain the characteristic rosé color. Fermentation takes place in stainless steel at controlled temperature, followed by 6 months aging in tonneaux.
The wine then undergoes second fermentation in bottle according to the Classic Method, with aging on lees for 36 months.
Disgorgement in April 2025, with no dosage (Pas Dosé).
