Vinification
The harvest is done by hand selecting the best grapes to bring to the wine cellar carefully for the press. The harvest is in the early September to have high acidity and a sugar content reaching at least 11,50% of alcohol. White vinification and in January of the next year the wine is put in autoclave adding CO2 for about 40 days.
